My room is 20 Degrees and I want great pizza tomorrow.

If you have an Ooni or some kind of home pizza oven and you want a simple and dependable recipe, this is it.

1000g of Strong White Flour (ideally 00 grade)
600g of water at approx 24 degrees centigrade.
27g of sea salt
1g instant dried yeast

Dissolve the salt in the water, mix the yeast in the flour. Combine well.

Knead vigorously by hand for 15 minutes or in a mixer for 10 mins. It is ready when the dough is smooth and elastic.

Place in a covered bowl and leave for 12 hours at room temperature overnight.

In the morning knock the dough back a bit and form into 6 pieces each weighing 220 grams each.

Leave the dough pieces to rest for 20 mins and then form each piece into a dough ball by folding the corners into the middle repeatedly to tighten up the dough. Then cup your hands and form each puece into a nice round ball.

Place the dough balls into a lightly floured tray and leave for 6 hours or more. The balls will almost double in size and look something like this.

Press, stretch, top, bake.
